Day 1

Today is our official start day.  I pan-grilled some chicken breasts last night for lunch today. This morning I got up at 7:15, feeling quite rested (I went to bed at 1045 and did sleep well–only waking twice, once on my own and once by child #2).  I went to the kitchen and made the coffee and then made an egg scramble with 5 eggs, 2 links of lamb sausage, green and yellow peppers.  Served that with a green salad and blueberries.  Nora and Evie ate it, too!

I made Marcus a salad for lunch with power greens, tomatos, bell pepper, chicken and walnuts with a vinegrette and gave him a clementine.  Nora took turkey “skewers” (rolled up on toothpicks), carrots and peppers (with some of the homemade “ranch” dressing I made last night), blue and black berries.  She asked for a water bottle so she wouldn’t be “tempted” to buy milk at lunch.

Brought Evie home from school at 12:15 and was feeling hungry, but not famished.  Made a salad with power greens (kale, spinach, and baby chard), chicken, and orange bell pepper.  I mixed cut cherry tomatoes with half an avocado, cilantro, lime juice, avocado oil, s&p and poured that over the greens/chicken/bell peppers.  It was huge!  And delicious!  I really wanted something sweet after, but I resisted having any fruit.

About 4 pm I was feeling lethargic and my head hurt so I fixed a cup of green tea.  Whole30 says no caffeine after breakfast, but this “carb flu” and first day back at work combo is kicking my butt.

I was starving when I got home at 5:30 so grabbed a few cashews and started cooking: salmon cakes with homemade tartar sauce over power greens, mashed cauliflower and steamed carrots. Dinner was a hit with just about everyone. Graham even tried the salmon!
During dinner I roasted some butternut squash and have some ground turkey defrosting. Tomorrow’s breakfast is butternut squash hash!

We start with Day 0 because as much as I wanted to start on New Year’s Day, eating black eyed peas on Jan 1 is not negotiable, so we did as much of the whole 30 diet as possible but also kept our cultural/family tradition for the first day of the year.

Breakfast was a chicken sausage, asparagus and onion fritata, green salad with avocado oil s&p, grapefruit and black coffee.  It was satisfying, but by noon I was famished and feeling a little head-achy (could have also been the bubby stuff and lack of sleep from the night before, though).

So lunch was 5 beef meatballs (2T almond flour, 1 egg, parsley, onion and basil–but I forgot the garlic!) in tomato sauce (made the night before for kid’s dinner), green salad with yellow bell peppers and olives.  This held me over for most of the day–even made it through the grocery store in the late afternoon– but by 5:30 I was getting hungry.

Dinner was black eyed peas (“hoppin’ John) with red bell pepper, carrots, onion and garlic (oh, yeah, and bacon.  I did skip the fatback!), garlic-y mustard greens (also with bacon and they were super bitter) and lean porkchops (not organic b/c they didn’t have organic pork at Costco or Giant–guess I have to go to Whole Foods for that).

Nora’s really into this, BTW and she made orange juice popcicles for dessert.
